Our kitchen team loves to flex their creative muscles to create a canapé menu that not only tastes amazing, but also isn’t like anything you’ve have had before. We make a point to use locally sourced, seasonal ingredients that won’t be found on your average supermarket shelf. When you get to work with these amazing ingredients & canapés on a daily basis, it can be easy to take for granted that our clients will also immediately recognise everything that’s included in our menu.
To help bridge the gap & hopefully lead you to the discovery of your new favourite dish, we’ve put together the following glossary of our 2025 Canapé menu:

Beach Succulent
- A local Australian plant grown on our beach shores are plump, juicy with a slight salty flavour – Used as a garnish

Berbere Ketchup
- A traditional Ethiopian spice blend with a hint of heat

Black Lava Salt
- Flaky sea salt blended with charcoal

Bonito
- A tuna-like fish species found locally in Australian waters.

Cashew Sour Cream
- A vegan substitute to standard sour cream, made using blended cashews

Celeriac Remoulade
- Shredded Celeriac (a root vegetable, closely related to celery, pasley & parsnips) mixed with remoulade (A tart, lemony traditional french sauce made up of ingredients such as capers, fresh herbs, pickles & sometimes anchovies or horseradish).

Crudo
- The Italian word meaning ‘raw’, refers to dishes featuring fresh, uncooked ingredients – typically meat or seafood.

Harissa
- A spiced chilli paste, often used with slow-roasted lamb & vegetables

Kombu Dust
- First-grade, dried kelp (seaweed)

Miso Apple
- Miso (salty, tangy, umami flavour) mixed with sweet apple

Mojo Pork
- Smoked pork marinated in a flavourful, citrus-garlic-herb marinade.

- A semi-hard cheese originating from the Monterey area of California. Known for its milk, buttery flavour & excellent melting qualities.
