MEET GAVIN LEWIS
Meet Gavin. Wine & Dine’m Sous Chef by day, sleep deprived new father by night. He keeps the production team motivated towards creating fresh, high quality cuisine all while juggling his new life as a father to his baby girl Aubree. We sat down with Gav to find out a bit more about his life outside the kitchen.
TELL US A BIT ABOUT YOUR ROLE?
I started off as a casual in June 2018 and in August was offered the role of Sous Chef. As Sous Chef I am in charge of the production kitchen which involves ordering produce, overlooking the other chefs as they prepare the food, checking off orders as they leave to ensure that they are correct and up to standard and I’m also Lincoln’s right hand man.
WHAT DO YOU MOST ENJOY ABOUT YOUR JOB?
I really enjoy the challenges and the diversity that comes with catering. We are always going to different venues and it’s never the same menu. I especially enjoy large scale events.
Anything Japanese! I love ramen. I usually make it myself but the best ramen I ever had was in a little hole in the wall ramen shop in Japan. The owner was not only making everything but he was also serving drinks and it was very impressive.
WHAT FOOD OR MENU HAS IMPRESSED YOU MOST AT WINE & DINE’M?
Definitely the bespoke menu items. We’ll give anything a go and we go pretty crazy with the bespoke stuff. Having a dedicated pastry chef means we get to make some pretty out there custom desserts.
FAVOURITE PLACE TO GO OUT WITH FRIENDS?
My friends and I like to always try new places.
Detour in Woolloongabba. They specialise in modern Australian food. I always get the gunpowder salmon with black ants.
BEST EVENT YOU’VE ATTENDED AND WHY?
I was part of the team that catered Simon Cowell’s 40th birthday in the UK – it was as over the top and extravagant as you might think. It was out in an old country castle and there projections of Simon Cowell as renaissance style cupids over the walls.
IF YOU COULD HAVE DINNER WITH ANYONE, WHO WOULD IT BE AND WHY?
Anthony Bordain – a very famous American chef. He does a lot of Travel and Cooking shows.
