Meet Sheree. Wine & Dine’m Catering’s Events Manager and connoisseur of the Brisbane hospitality industry. Her experience and intimate knowledge of the industry makes Sheree a huge asset to our Wine & Dine’m team. There is not a musician she hasn’t heard, a venue she hasn’t explored or a cocktail concept she is not afraid to create.
Sheree’s favourite venues to work with include the State Library of Queensland, Jo-Jo’s and the newly opened Fortitude Music Hall. When Sheree works with a private, corporate or wedding client, you can be guaranteed her bubbly personality will win our chefs and logistics team over every time to ensure every detail will be considered and delivered.
We sat down with Sheree to discuss her favourite industry suppliers, beverages and venues.
Why did you choose to work with Wine & Dine’m Catering?
I was searching for a role that would challenge me and a company that inspired me and I have found all of that and more. There is an abundance of experienced professionals in this company that love to share their experience and passion.
What is the best thing about your role?
I love meeting new clients/industry professionals and the creative aspect of events. No day is ever the same as another and that is the same for our events.
As a vegetarian, what would you recommend to other fellow vegetarians from our menus?
My favourite menus are the shared dining and the canape menus. My all-time favourite canape is the brand-new Goats cheese cake, shiraz onion reduction, gingerbread. The goats cheese cake is smooth and indulgent while the gingerbread cracker adds great texture. In the shared dining, I love Pearl cous cous, vibrant mint verde, citrus, red pepper salad. I recently had wedding clients and industry professionals in for a tasting and they loved this salad too.
What trends in hospitality do you see on the rise?
In 2019 I see the presence of savoury flavours in cocktails shining through. Herbs and spices began to creep in last year however I think people are starting to push the boundaries with this which is exciting. The classics have also made a massive come back however we are looking at new spirits and ingredients to play with the flavour profile. We recently teamed up with Brookies Gin to serve Negroni’s on an event where our chef had branded the clients logo into the orange peel. It looked spectacular and brought through a light smokey essence.
Who are some of your industry favourites to collaborate with?
Where to start!? There are so many amazing people in this industry!
Musicians: Beccy Kneen is a phenomenal vocalist and an absolute professional. Jake Hill is an incredible vocalist and guitarist. If you are looking for a band get everyone on their feet, the Hanlon Brothers are the band for you.
What are your current favourite venues to work in?
Lightspace, State Library & Jo-Jo’s are beautiful and unique venues that I work with a lot. Now that Fortitude Music Hall is open I am thrilled to be looking after the catering for this incredible space. This music hall will change the face of the Brisbane music scene and I am over the moon to be a part of that.
