It’s not every day you can say you’ve catered for dignitaries such as the Prime Minister of Australia and some of its Premiers. It’s also not every day you can say you’ve catered for the Prince of Wales. However, Wine & Dine’m Catering are proud to say we are one such catering company who can. Now, we’re not in the habit of bragging, but securing the contract to cater for the Commonwealth House and Media Centre (CHMC) at the 2018 Commonwealth Games with our friends at Moreton Hire was a great accomplishment for the team and one event we’ll never forget!
The CHMC, set-up in a gorgeous, spacious marquee situated on one of Broadbeach’s world-famous beaches, welcomed guests between 21 March – 16 April this year. The marquee played host to members of the world media and other dignitaries like the Australian Prime Minister and Prince Charles. There were 27 events held at the CHMC during the Commonwealth Games, ranging from 50 to 200 guests. The food and wine flowed as the Wine & Dine’m team were responsible for catering all events from breakfasts, morning teas and lunches, to cocktail hours, seated dinners and feasts.
LOCAL FOOD, LOCAL WINE AND LOCAL CHEFS, OH MY!
The menu and drink packages were designed to hero produce sourced from regions spanning the Queensland borders. In collaboration with talented Indigenous chefs and Queensland suppliers, Wine & Dine’m Catering created a menu that not only showcased the very best local produce, but also the brilliant chefs and businesses behind it.
Our menus included a number of native products, sourced through the First Food Co, which is run under the leadership of Aunty Dale Chapman. Dale is an Indigenous woman, born in Dirranbandi and is a Kooma Yuwaalaraay woman from central Queensland. Leaning on Dale’s knowledge and expertise as a chef, teacher and food producer, we created a menu enriched with wild harvested and ethically farmed ingredients. Some of the adventurous ‘bush food’ ingredients used included Wattleseed, Ooray plum, lemon aspen, finger limes, quandong and strawberry gum leaf.
When it came to selecting wines, Sirromet’s sparkling from the Granite Belt was an easy choice, alongside a Sauvignon Blanc from Witches Falls and Syrah from Mount Tambourine. Accompanied by a refreshing selection of craft beers from the Balter Brewing Company on the Gold Coast and Fortitude Brewing Co. in Mount Tambourine, it’s fair to say the drink list didn’t disappoint.
We felt absolutely honored to serve our dignified guests, and hope that they left with fond memories of the incredible Australian fare they had on their visit Down Under.
