Native Prawn Curry, fragrant rice & beach succulent

Beach Succulent

A local Australian plant grown on our beach shores are plump, juicy with a slight salty flavour – Used as a garnish

USED IN: Native Prawn Curry


Berbere Ketchup

A traditional Ethiopian spice blend with a hint of heat

USED IN: Harissa Lamb Sausage Roll


Black Lava Salt

Flaky sea salt blended with charcoal

USED IN: WD 'Fish & Chip'


Bonito

A tuna-like fish species found locally in Australian waters.

USED IN: Hiramasa Kingfish


Cashew Sour Cream

A vegan substitute to standard sour cream, made using blended cashews

USED IN: Sweetcorn Tempura


Celeriac Remoulade

Shredded Celeriac (a root vegetable, closely related to celery, pasley & parsnips) mixed with remoulade (A tart, lemony traditional french sauce made up of ingredients such as capers, fresh herbs, pickles & sometimes anchovies or horseradish).

USED IN: Moreton Bay Bug Roll

Crudo

The Italian word meaning ‘raw’, refers to dishes featuring fresh, uncooked ingredients – typically meat or seafood

USED IN: Beef Crudo Tart


Harissa

A spiced chilli paste, often used with slow-roasted lamb & vegetables

USED IN: Harissa Lamb Sausage Roll


Kombu Dust

First-grade, dried kelp (seaweed)

USED IN: Smoked Chicken Waffle Cone


Miso Apple

Miso (salty, tangy, umami flavour) mixed with sweet apple

USED IN: Yuzu Lemon Tart


Mojo Pork

Smoked pork marinated in a flavourful, citrus-garlic-herb marinade

USED IN: Cuban Sandwich


Monterey Jack

A semi-hard cheese originating from the Monterey area of California. Known for its milk, buttery flavour & excellent melting qualities

A rich, creamy mayonnaise with a deep, savoury flavour

A tomato-based Mexican sauce originating from the city of Veracruz, using ingredients like olives, capers, garlic & chillis

White Soy

A lighter, sweeter sauce compared to traditional dark soy sauce

Yuzu Aioli

An Asian sour citrus fruit, similar to grapefruit
